Super Quick Life Giving Breakfast Bowl

Ahhhh…Breakfast. I love breakfast. My kids love breakfast. We are weird morning people and I’m ok with that. Breakfast not only gives you a chance to wake your body up and get ready for the day but a power packed breakfast fuels you for the work that needs to be done. This is my breakfast bowl (made slightly prettier for today) that has a good amount of protein, tons of fibre and a little healthy fats which is super important right now for me to nourish my growing child. My kids more then happily eat this pretty well every morning. I do change up the fruit according to season and availability but we always have some sort of berries for antioxidant power plus all the other great nutrients that are found in them. If they are not in season, I buy frozen but luckily the store had some beautiful berries on sale and I could not resist! Once you get into the rhythm of this breakfast, its very quick and easy!

Here is the recipe but I hope you continue to add in the healthy ingredients that you love!

I don’t usually do a single serving but that is how this recipe came about. All 6 of us eat this regularly and so I make enough for 6.

Life Giving Breakfast Bowl-for 1 serving, takes about 5 minutes to prepare

1/2 cup quick oats

3/4 cup of water

1-2 tsp maple syrup (optional, berries also give sweetness)

2 tbsp seed mixture (see below)

1 cup berries (raspberries, blueberries, strawberries, blackberries whatever kind you enjoy)

1/4 avocado

1/2 banana

optional: other nuts, apples, raisins, pears etc. we have changed up these things quite a bit

Seed Mixture:

This is a make ahead thing just to cut down on time: 1 cup ground flax, 1 cup chia seeds, 1 cup hemp hearts-mix together and store in an air tight container in the cupboard and measure out as needed.

Add water to quick oats and microwave till you can see the oats rise up in the bowl (approx. 1 min 20 sec). Add in maple syrup if desired and top with the ingredients. Enjoy and go get your day!

I also make this stove top if I have a bit more time in my mornings! It doesn’t take much longer but I like the consistency of the oats cooked this way.
