Recently my blog moved to different server and this recipe got lost in the move! It’s one of my husband’s absolute favourite treats of all time. I have made them several times and they have absolutely devoured every time. They are just so good and easy enough to make gluten free as well as very low in sugar and of course like all my recipes, vegan!
The Best Vegan Double Chocolate Chip Cookies
1/2 cup vanilla soy milk (or other milk alternate, this is what we had)
3 TBSP ground flax
3/4 cup applesauce
2 tsp vanilla
3/4 cup Cocoa Powder
2 Cups of Flour or 1 3/4 cup gluten free flour mix
1/2 tsp salt
1 TBSP baking powder
1 1/2 cups of vegan chocolate chips (my fav is Enjoy Life)
Pre heat oven to 350 degrees. Mix together the flax and soy milk and set aside to soak for 10 minutes. While that is soaking, mix together in a separate bowl the dry ingredients. In a mixer, beat the wet ingredients and add in the milk/flax mixture. Add your dry ingredients and mix until just mixed but do not over mix. Add in the chocolate chips and stir until mixed in. Spoon onto a cookie sheet and bake for 10 minutes. My cookies didn’t appear done at this time but they were. Allow to cool for a minute or two before transferring them. Makes roughly 30 cookies depending on size.
